‘High Violet’ - Syrah 2021

Fruit is sourced from a single vineyard at the base of the Porongurups range in the Great Southern. Grown on ancient decomposed granitic soils, The 2021 High Violet Syrah is a beautiful example of cool climate Syrah as a counterpoint to the more commonly found warm climate Syrah in Western Australia.

As with all the wines minimal intervention and handling was used during the winemaking process. After partial whole berry destemming, wine fermented naturally in open top fermenters with the addition of 60% whole bunches. A submerged cap fermentation ensured that extraction of tannin was gentle and gradual lasting approx 18 days.

The wine spent 11 months in old larger format French oak, with a natural settling and no further rackings prior to being bottled unfined and unfiltered in April 2022.

A plush, silky mouthfeel with fine acidity keeps the wine lively and balanced.
