Honest wines started out as an opportunity to showcase special vineyard sites to their utmost potential…A way to capture a specific moment in time and guide it into the bottle in the most honest way possible.
THE HONEST JOURNEY
An honest bottle of wine has to be a representation of the exact place in that moment of time. The belief being that the duty of a winemaker is to faithfully interpret the site without any distractions.
VINEYARDS AND TERROIR
We work closely with growers whose ideas around grape growing and winemaking align with our beliefs. Choosing to work with dry grown, own- rooted, older bush vines wherever possible.
The vineyards we work with span a large geographic location- from the warmer Swan Valley in the North, through the ocean influenced Margaret River and all the way down to the Porongurups range in the cooler South West corner.
VINIFICATION
A simple; careful winemaking philosophy is practiced in the cellar- Each grape variety is treated so that it is able to fully express itself, this allows us to create unique wines that truly reflect the sites on which they are grown. Fruit is handled oxidatively using an old basket press and no pumps are ever used.
All of the wines are fermented in older oak without artificial additives. New oak is avoided and fining processes are never used. Care is taken not to over extract red varieties, the goal being to create lighter framed wines built with both structure and finesse.
Minimal amounts of sulphites are added only at bottling to keep the wines in check.
